“Pizza is a world phenomenon, it looks attractive, it smells good, it fills you up. It is simply an amazing and quick dish that you can combine in amazing flavor combinations. There are sweet pizzas or pizzas without flour, which is a healthy eating trend in recent years,” says Leonard Gekas, head of the Pizza Coloseum restaurant chain in Ostrava.

How many types of pizza do guests find on your menus and which one do they order most often?
In our Pizza Coloseum restaurants, we offer 16 types of pizza. Among the best sellers are pizza Margherita, pizza Hawaii and pizza Quattro Formaggi. And as one of the small ones, we can make pizza without gluten and whole grains.

Can it be said that, for example, young people prefer something different from older generations?
This is not the case, it is solely about the choice and taste of each customer, age does not matter here.

What is the interest in pizza in the integral version, which the restaurant offers only exceptionally?
Interest in whole wheat pizza is not as great as in classic pizza, although the whole wheat version is slightly richer in vitamins, minerals and fiber. We also offer gluten-free pizza, which is much more popular with customers.

On the menus of some restaurants, we can find rather strange recipes, such as pizza with ermine and cranberries, with Olomouc fresh cheese and the like. how are you?
We do not offer these types of pizzas in our franchise restaurants, as we strictly adhere to Italian recipes and this combination of flavors is not traditional Italian.

What if the guest wanted an American-style pizza that is quite different from Italian? Above all, the height of the body…
The dough makes a good pizza. We have flour directly from Italy, but this flour is not suitable for making American style pizza.

And what do you think about the fact that somewhere pizza is offered to guests as a dessert with chocolate, nutella, mascarpone, whipped cream or fruit?
We also tried pizzas with nutella, mascarpone and strawberries on the menu, but the response to the sweet pizza was minimal. Some younger customers like it, but it’s not typical Italian pizza.

Do you have a special recipe or surprise for your holiday Wednesday guests?
Of course, during this day our customers can buy a second pizza for 50 CZK, and four times a year we have events for them called VIA ITALIA. These are offers based on seasonal ingredients, for example pizzas with fresh asparagus, game ragout, pumpkin, mushrooms and the like. We are always happy to welcome them.
