After coming home from work, no one wants to spend long hours in the kitchen preparing a delicious dinner, so many often settle for bread with butter or scrambled eggs. A quick lunch or dinner definitely doesn’t have to be all kinds of salads, baked toast, soup from a bag or other instant meals. When it comes to quick cooking, many people immediately think of chicken recipes. Compared to other types, this is done almost instantly. The problem is that many people simply do not know how and with what to prepare a slice of chicken. In the end, it is often just fried in a pan and served with boiled potatoes. Such a dish will fill you up, but it certainly won’t impress anyone. In the end, it may not even be worth the effort and time.
Chicken breast is very versatile. You can conjure up many excellent and quick dishes from them.
How to make a chicken steak
If you choose chicken breast for dinner, buy it with the skin on. The meat is then much tastier, and at the same time the breasts have a much lower tendency to lose juice. That is why they are much juicier after preparation. At the same time, it is worth leaving the meat to rest at room temperature for a short time before frying. It will bake much better. When turning the meat in the pan, never poke it with a fork, so as not to unnecessarily create holes through which the juices would drain.
Chicken has one downside. The thing is, as mentioned, it dries quite easily, even if you give it enough attention and care. Therefore, it is always better to prepare a sauce for it, which perfectly masks any dryness of the meat.
Chicken breast on chives according to Zdenek Pohlreich
Chicken breast with chives is delicious with pasta.
you will need:
4 chicken breasts with skin
50 milliliters of olive oil
200 milliliters of dry white wine
150 milliliters of chicken stock
150 milliliters of whipping cream
20 grams of butter
2 sprigs of fresh thyme
1 teaspoon of fresh chopped chives
Wash, dry and clean the chicken breasts. Heat the olive oil in a pan and put the chicken breast in it, skin side down. Let the skin get a nice golden color, then turn the meat. In general, it should not be baked for more than 10 minutes, so that it does not dry out. Then remove the meat from the pan and prepare the sauce.
Pour white wine into the same pan and cook for a while so that the alcohol evaporates. Add the broth, stir and allow the contents of the pan to reduce by about half. Then add cream and season with salt and pepper, or lemon juice. Finally, mix the thyme and chives into the sauce, add the meat and let it heat up. Meat with sauce is ideally served with pasta or rice.
