Chicken paprika is loved by children and adults alike, so it’s never too early to teach them how to cook this popular Czech dish. Soft and tender meat with cream sauce and dumplings is not for dieters, but who could resist this delicacy from time to time.

Chicken or chicken with paprika are dishes that represent the childhood of many of us. We think of grandma with a pot of delicious cream sauce and a bowl of steamed dumplings. Just a spectacular Sunday feast.

You may not know this, but although paprika chicken is very popular in the Czech Republic, it comes from Hungary. There it is called chicken stew. In the 19th century, it was already known throughout the Austrian Empire, where it was called Paprikahendl. Later, this dish reached us, where we adapted the recipe and adopted it as our own.

Dumplings or pasta are a traditional side dish

Chicken on paprika is usually served with dumplings and pasta, but some also eat it with rice or potatoes. In Slovakia, they do not allow gnocchi, which are similar to Hungarian nokedli. These are dumplings that, unlike gnocchi, are not made from potatoes, but only from flour and eggs.

Chicken thighs are ideal for sauce. They are not dry like brisket, but they are still dietary, tender, tasty and juicy. If you don’t like chicken, you can prepare an alternative from chicken, pork, turkey or even rabbit meat.

Keep in mind that in order for the dish to be perfect, you must never let the peppers burn while stewing. That would make the whole sauce bitter.

A quick and easy recipe for chicken with peppers

Now let’s make a quick chili chicken that even the kids can handle. Prepare 1/2 kg of chicken, ideally legs, 1 spoon of red pepper, 1 large onion, plain flour, 200 ml of whipping cream, salt, pepper and oil.

Start by thoroughly washing the meat. Foam the onion and put the meat on it. Strain and sprinkle with ground paprika. Cover with water or stock. Salt and pepper. Simmer gently under the lid until the meat begins to fall apart. Remove it from the sauce and remove it from the bone. Before you put the meat back in the sauce, finish it first by pouring in half the cream, adding water and boiling.

Whisk the flour in the rest of the cream and pour into the boiling sauce. Beat well with a whisk so that there are no lumps in the sauce. If there is, blend it with an immersion blender. Then boil to remove the taste of flour and return the meat to the sauce. Add salt and pepper and feel free to add half a bouillon cube if you did not add broth, but only water.
