Whoever said that Sunday lunch can’t be done quickly and with almost no work, probably has a few recipes in their cookbook. There are many dishes that look absolutely great on the Sunday table and will delight even the pickiest guests. Baked chicken thighs are one of them. Of course, only salted and baked chicken legs will not make a big impression on anyone, and no one will sit on their ass because of their taste. But if you season them well and prepare the perfect sauce, your guests will be asking for the recipe as soon as lunch is off the plate. One of the ingredients Zdeněk Pohlreich uses in his recipe for baked chicken legs is a relatively lesser-known Creole seasoning. It is a mixture of several types of spices and herbs, which gives many dishes a completely unmistakable taste. You can buy Creole spices in some supermarkets, but you can easily make them at home. Creole spices can be used in the preparation of many dishes, so everyone should have a jar in the kitchen. It goes perfectly with chicken or turkey meat, in some types of soups or in cream sauces. You’ll find that after you try Creole seasoning, you’ll add it to any meat dish.

you will need:

1/2 teaspoon of salt

2 spoons of granulated garlic

1 tablespoon of ground black pepper

1 tablespoon cayenne pepper (optional)

2 and 1/2 spoons of sweet ground paprika

1 tablespoon of dried thyme

1 tablespoon of dried rosemary

1 tablespoon of onion powder

Method:

Mix all the spices in a bowl and pour into a sealable jar. It has an almost unlimited shelf life. Use it when preparing various dishes to taste.

you will need:

For the chicken

4 boneless skinless chicken thighs

juice of 1/2 lemon

2 sprigs of thyme

2 sprigs of rosemary

1 teaspoon cayenne pepper

3 tablespoons of oil

salt

pepper

For the sauce

250 grams of tomatoes

2 cloves of garlic

1 spring onion

1 red pepper

1 yellow pepper

1 sprig of thyme

1 sprig of rosemary

2 sprigs of oregano

2 tablespoons Creole seasoning

a few drops of lemon juice

salt

oil

Method:

Clean, rinse and dry the chicken thighs with a paper towel. Season them well with salt and pepper on both sides and cover with lemon juice. Take a small baking dish and chop the thyme and rosemary into it, add three tablespoons of oil and a pinch of cayenne pepper. Transfer the meat to a baking dish and coat it on all sides with the mixture. Then put the thighs with the skin side up and bake in an oven heated to 180 degrees for about 45 minutes.

Before the chicken is baked, we will use the time to prepare the sauce. Heat some oil in a pan and fry finely chopped spring onion and garlic. Then add finely chopped tomatoes with chopped rosemary, thyme and oregano to the pan. Sprinkle with Creole spices and salt the sauce to taste if necessary. Finally, add a few drops of lemon juice and both peppers cut into small cubes. Cook the sauce for about five minutes and it’s done.

Chicken thighs are served with sauce and, for example, baked potatoes. Pleasant.
